Makes 16 buns
Dough
1 cup lukewarm milk
½ cup sugar
2 tsp instant yeast
3½ cups all-purpose flour, more if needed
1 egg
1 Tbsp butter, very soft
1 tsp vanilla paste or vanilla extract
1/2 teaspoon salt
To Fry and Fill
Neutral oil, for frying
1½ cups apricot jam
Powdered sugar (optional)
Stir milk, sugar, yeast, and 1 cup flour until smooth; let foam 5–10 minutes. Add egg, butter, vanilla, salt and remaining flour to form a soft dough. Knead until smooth, about 5 minutes. Cover and let rise until doubled, about 1 hour, then rise again 30 minutes.
Roll dough ½-inch thick, cut 3-inch rounds, place on parchment, and let puff 30 minutes. Fry in 350°F oil, flipping once, until golden, 2–3 minutes per side; remove parchment as frying. Drain.
Fill warm buns with apricot jam and dust with powdered sugar, if using. Best eaten fresh.
